I don’t make yellow cake very often because I didn’t have a good recipe and considered it inferior to other flavors. However, my roommate made this recipe the other day and it was quite moist and delicious, even without icing!
I definitely recommend giving this a try and making it your default yellow cake recipe.
Ingredients:
1 ¾ c flour
1 c sugar
2 tsp baking powder
¼ tsp salt
1 c butter
4 eggs
Berries (optional)
Directions:
Preheat oven to 350 degrees.
1) Beat together eggs, sugar, butter, salt, baking powder, and flour.
2) Sprinkle berries on top, if using.
3) Bake 20-30 minutes (may vary according to pan size).
4) Cool; then ice, if desired.
I think this cake would be scrumptious with a chocolate icing. It would make good cupcakes as well!

Definitely going to have to try this! I've been on a years-long search for the "perfect" yellow cake recipe. Haven't found it yet, though I've gotten pretty close :)

ReplyDeleteI made this cake recently and it was good...in fact, I made it into cupcakes. However, I'm changing the cooking time above as it is a bit off..
