I don’t make yellow cake very often because I didn’t have a good recipe and considered it inferior to other flavors. However, my roommate made this recipe the other day and it was quite moist and delicious, even without icing!I definitely recommend giving this a try and making it your default yellow cake recipe.
Ingredients:
1 ¾ c flour
1 c sugar
2 tsp baking powder
¼ tsp salt
1 c butter
4 eggs
Berries (optional)
Directions:
Preheat oven to 350 degrees.
1) Beat together eggs, sugar, butter, salt, baking powder, and flour.
2) Sprinkle berries on top, if using.
3) Bake 20-30 minutes (may vary according to pan size).
4) Cool; then ice, if desired.
I think this cake would be scrumptious with a chocolate icing. It would make good cupcakes as well!
Definitely going to have to try this! I've been on a years-long search for the "perfect" yellow cake recipe. Haven't found it yet, though I've gotten pretty close :)

ReplyDeleteI made this cake recently and it was good...in fact, I made it into cupcakes. However, I'm changing the cooking time above as it is a bit off..
