I know, I was surprised too. I don't make a lot of non-chocolate desserts, and I can't recall what prompted me to try this one.
But from the first time, I was hooked. Once you eat one, you just can't stop nibbling. They're also good to have around for guests who may or may not like chocolate, and they can be frozen.
This recipe (slightly modified) is from 300 Best Comfort Food Recipes by Johanna Burkhard, which is a cookbook that I definitely recommend!
Recipe follows...
Ingredients:
(crust)
1 c flour
1/4 c sugar
1/2 c butter, cut into pieces
(filling)
2 eggs
1 c sugar
2 tbsp flour
1/2 tsp baking powder
pinch of salt
1 tbsp grated lemon zest
1/4 c fresh lemon juice
confectioner's sugar (optional)
Directions:
Preheat oven to 350 degrees
1) Mix flour and sugar; cut butter in to make coarse crumbs; press into baking pan; bake for 18-20 minutes or until light golden. Let cool.
2) Beat eggs with sugar, flour, baking powder, salt, lemon zest, and lemon juice. Pour over cooled base; cook at 350 degrees for 25-30 minutes or until filling is set and light golden. Dust with confectioner's sugar if desired.
Ooh, I'll have to try these. I'm always on the lookout for non-chocolate recipes these days. I gave up chocolate a while ago to try to prevent migraines. I was also of the opinion that non-chocolate desserts were just silly. ;) But sadly I have had to change my mind, and my baking tendencies.
