How to Marinate Chicken for Fajitas

This is an easy, tasty marinade. Definitely a staple!





Ingredients:
1/4 c lime juice
3 tbsp olive oil
1 tbsp ketchup
1 tsp chili powder
1 tsp cumin
1/4 tsp pepper
2 cloves pressed garlic

Directions:
1) Mix all ingredients together and pour over chicken pieces; place in refrigerator 1-2 hours or even overnight.
2) Chicken tastes best grilled or broiled, but can also be sauteed!

My favorite toppings for fajitas are: salsa, sour cream, avocado, and cheese. Yum!

  1. Liz, it seems like a very recipe for a fajita marinade. I'll make it, and I'll let you know how it turned out...I must say in the last three weeks it's been very hard to motivate myself to cook...being so hot.

  2. Oh, it's a very easy recipe, and the leftover cooked chicken can then be used for other dishes as well!
