How to Make Pancakes from Homemade Pancake Mix

No need to buy Bisquick anymore! If you keep a supply of homemade pancake mix on hand, that is. Then all you have to do is add eggs, milk, and oil, and the pancake batter is ready...

 

(from my mom plus the "More with Less" Cookbook...

Ingredients:
(Pancake Mix-makes one gallon)
10 c white unbleached flour
2 c whole wheat pastry flour (or cornmeal...or just more white flour)
2 tbsp salt
4 tbsp baking powder
2 tbsp baking soda
3/4 c sugar

(What to add when making pancakes)
1 egg
1 c buttermilk
2 tbsp oil
1 1/2 c pancake mix

Directions:

1) Mix all dry ingredients together thoroughly, store in a jar.
2) When ready to make pancakes, stir together egg, buttermilk, oil, and dried mix.
3) Ladle batter onto hot, greased skillet, cook until done.
