I'm sure it would be tastier in the summer with local fruits and veggies, but it hit the spot for me anyway. I love the zing of the lemon juice and cumin.
This made one serving for me, so add other veggies or double/triple the ingredients to get more servings.
1 ripe tomato
1/2 ripe avocado
1 tbsp fresh lemon juice
1/4 tsp cumin
1/4 tsp garlic powder
salt/pepper to taste
mayo or olive oil, to taste
1) Coarsely chop tomato and avocado (I don't have a food processor; of course you can puree if you want more of a dip or salsa).
2) Gently blend in lemon juice and spices.
3) Dress with mayo or olive oil, if desired.
