How to Make Quick Beef (or Chicken) Curry


There is no claim to Indian authenticity here! Just a quick weekday skillet meal in a curry sauce.


Ingredients:
1 pound boneless beef (or chicken, pork, etc.)
1 tbsp flour
1 medium onion
1 tsp curry powder
1 tbsp. tomato paste
1/4-1/2 cup water or chicken broth
Cooked rice, vegetables as a side

Directions:

1) Dip meat in flour, add salt and pepper, and brown for 2-3 minutes; set aside.
2) Saute onions.
3) Add curry powder to saucepan, stirring quickly for a few seconds.
4) Add tomato paste and a few spoonfuls of water, stirring continuously.
5) Add meat to pan and continue stirring, adding liquid gradually until you reach the desired consistency. Add additional curry powder or salt and pepper, to taste.
6) Serve over rice.

You can add whatever vegetables you like! Even some raisins might be yummy, or grated carrot. I didn't have much in the house, so this was what I came up with.
