Summer wrap-up

I just couldn't move on without closure, even if it means I'm finishing up this post well into autumn. Here are the final (no baking allowed) ideas from my summer repertoire. This installment courtesy our family reunion in mid-August.

Chocolate Mousse
Our favorite chocolate mousse recipe-divine!
Ingredients
1 C Heavy cream
20 oz Chocolate chips
3 C Heavy cream
½ C Confectioners sugar
2 tsp Vanilla

Directions
1. Heat 1 C heavy cream until simmering
2. Remove from heat and add chocolate chips. Move into bowl
3. In separate bowl whip together 3 C heavy cream, conf sugar, and vanilla
4. Add 1/3 of whipped mixture to chocolate mixture, then fold in the rest and cool 4-6 hours
5. Serve with whipped cream

Easy All-Purpose Marinade
(otherwise known as "Mimi's marinade" or "Pat Sinatra's")
Before the veggies went on the grill
Ingredients
½ C Oil
½ C Soy sauce
½ C Worcestershire sauce
¼ C Lemon juice
2 Tbsp Mustard (French’s or Poupon)
2-4 Cloves Crushed garlic

Fish/Crabcakes
Deboning action prior to making fishcakes!
Ingredients

1 lbs Crabmeat (picked clean and pulled apart )*
1/3 C Crushed crackers (i.e. ritz)**
3 Green onions (finely chopped)
¼ C Mayo
1 Egg
1 tsp Worcestershire sauce
1 tsp Dry mustard
½ Lemon juice
¼ tsp Garlic powder
1 tsp Salt
Dash Cayenne pepper
Flour
Oil for cooking
Dipping sauces

Directions
1. In large bowl combine all ingredients (except oil and flour)
2. Shape into patties and dust with flour
3. Cook cakes in heated oil until brown on both sides
4. Dry on paper towels
